Course Details
Semester II February 4 – May 27, 2026: Fundamental Kitchen Skills and Trade Calculations CULA 1100
The foodservice industry requires a competent and skilled workforce. Students in this course learn fundamental knife skills, knife handling & care, commercial kitchen tools & equipment identification and use. Other learning objectives include basic trade calculations and the importance of flavor matrix in cooking.
Admission Requirements: Completed any of: Math 10C, Math 10-3, Math 20-4
Day/Time: Wednesdays 4:00 - 7:00 p.m.
Location: Mother Margaret Mary High School, 2010 Leger Road
*ECSD reserves the right to cancel courses that do not meet minimum enrolment requirements.
